Description
Apricot Glazed Chicken with Charred Scallions is a delicious and easy-to-make dish that combines tender chicken thighs with a sweet and tangy apricot glaze, topped with charred scallions.
Ingredients
Scale
- 2 pounds boneless, skinless chicken thighs
- 1 cup apricot preserves
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 6 scallions, trimmed
Instructions
- Preheat your oven to 400°F.
- In a medium bowl, mix together the apricot preserves, soy sauce, Dijon mustard, garlic powder, onion powder, salt, and pepper until well combined.
- Place the chicken thighs in a large baking dish and pour the apricot mixture over them, ensuring they are well coated.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- While the chicken is baking, heat olive oil in a skillet over medium-high heat. Add the scallions and cook for 2-3 minutes, turning occasionally, until they are charred and tender.
- Once the chicken is done, remove it from the oven and let it rest for 5 minutes before serving. Serve the chicken topped with the charred scallions.
Notes
- For a spicier kick, add a teaspoon of red pepper flakes to the apricot glaze.
- For a healthier option, substitute the apricot preserves with sugar-free fruit spread.
