A healthy and delicious avocado chicken salad that combines shredded chicken with creamy avocado and Greek yogurt.
Ingredients

- 2 cups cooked chicken, shredded
- 1 ripe avocado, mashed
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped (optional)
Instructions
- In a large bowl, combine the shredded chicken and mashed avocado. Mix until well combined.
- Add the Greek yogurt, Dijon mustard, lemon juice, red onion, celery, garlic powder, salt, and pepper. Stir until all ingredients are evenly incorporated.
- If using, fold in the chopped cilantro for added flavor.
- Taste and adjust seasoning if necessary.
- Serve immediately on a bed of greens, in a sandwich, or in lettuce wraps.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce.
- Substitute the chicken with canned tuna or chickpeas for a different protein option.
