A quick and tasty recipe for Baked Buffalo Chicken, perfect for a single serving.

- 1 boneless, skinless chicken breast (about 6 ounces)
- 1 tablespoon buffalo sauce (plus extra for serving)
- 1 teaspoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1/4 cup shredded cheddar cheese
- 1 tablespoon chopped green onions (for garnish)
Instructions
- Preheat your oven to 400°F.
- In a small bowl, mix the buffalo sauce, olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Place the chicken breast in a baking dish and coat it evenly with the buffalo sauce mixture.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- In the last 5 minutes of baking, sprinkle the shredded cheddar cheese on top of the chicken and return to the oven until melted.
- Remove from the oven and let it rest for a few minutes. Garnish with chopped green onions and serve with extra buffalo sauce if desired.
Notes
- For a spicier kick, add a dash of cayenne pepper to the buffalo sauce mixture.
- Serve with a side of celery sticks and ranch or blue cheese dressing for dipping.
