A delicious and unique twist on traditional banana bread, made with glutinous rice flour for a chewy texture.

- 2 ripe bananas, mashed
- 1 cup glutinous rice flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup coconut milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the mashed bananas, coconut milk, egg, and vanilla extract. Mix until well combined.
- In another bowl, whisk together the glutinous rice flour, sugar, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a nutty flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
- Substitute the coconut milk with almond milk or regular milk for a different taste.
