Ingredients

  • 1 cup raw cashews, soaked in water for at least 2 hours and drained
  • 1 cup pitted Medjool dates
  • 1 cup unsweetened shredded coconut
  • 1 cup fresh blackberries (or frozen, thawed)
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a food processor, combine the soaked cashews, pitted dates, and shredded coconut. Pulse until the mixture is well combined and resembles a sticky dough.
  2. Add the melted coconut oil, vanilla extract, and a pinch of salt to the mixture. Process again until smooth and creamy.
  3. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  4. Press the cashew mixture evenly into the bottom of the prepared baking dish. Use a spatula or your hands to ensure it’s compact and level.
  5. In a separate bowl, mash the blackberries with a fork until slightly chunky. Spread the mashed blackberries evenly over the cashew layer.
  6. Place the dish in the refrigerator for at least 2 hours to set.
  7. Once set, lift the slice out of the dish using the parchment paper overhang. Cut into squares or bars.

  • For added texture, mix in some chopped nuts or seeds into the cashew layer before pressing it into the dish.
