Description
A delicious and sweet side dish made with tender sweet potatoes and crunchy pecans, perfect for any occasion.

- 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
- 1 cup brown sugar, packed
- 1/2 cup unsalted butter
- 1/2 cup pecans, chopped
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup water
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring water to a boil. Add the sweet potatoes and cook for about 10 minutes, or until just tender. Drain and set aside.
- In a large mixing bowl, combine brown sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Stir until well mixed.
- Add the cooked sweet potatoes to the bowl and gently toss to coat them in the sugar mixture.
- Transfer the sweet potatoes to a greased 9×13-inch baking dish. Pour the remaining sugar mixture over the top and sprinkle with chopped pecans.
- Add 1/4 cup of water to the baking dish to help create steam while baking.
- Cover the dish with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are caramelized and tender.
- Let cool for a few minutes before serving.
Notes
- For a spicier flavor, add a pinch of cayenne pepper to the sugar mixture.
- You can substitute walnuts for pecans for a different nutty flavor.
