A delicious and quick meal featuring grilled chicken, fresh mozzarella, tomatoes, and basil, all pressed between slices of ciabatta or focaccia bread.

- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 slices of ciabatta or focaccia bread
- 4 ounces fresh mozzarella cheese, sliced
- 1 large tomato, sliced
- 1 cup fresh basil leaves
- Balsamic glaze for drizzling
Instructions
- Preheat a grill pan or panini press over medium heat.
- Season the chicken breasts with Italian seasoning, salt, and pepper. Drizzle with olive oil.
- Cook the chicken on the grill pan for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F. Remove from heat and let rest for a few minutes before slicing.
- Assemble the panini by layering sliced chicken, mozzarella, tomato, and basil on one slice of bread. Drizzle with balsamic glaze and top with another slice of bread.
- Place the assembled sandwich on the grill pan or in the panini press. Cook for about 3-4 minutes, or until the bread is golden brown and the cheese is melted.
- Remove from heat, slice in half, and serve immediately.
Notes
- For added flavor, marinate the chicken in balsamic vinegar for 30 minutes before cooking.
- Substitute the mozzarella with goat cheese or feta for a different taste profile.
