Description

Delicious and easy-to-make Chicken Skewers, also known as Chicken Spiedini, perfect for grilling.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup Italian bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Wooden skewers (soaked in water for 30 minutes if using)

Instructions

  1. Cut the chicken breasts into 1-inch cubes and set aside.
  2. In a large bowl, combine the bread crumbs, Parmesan cheese, garlic powder, oregano, salt, pepper, and parsley.
  3. In a separate bowl, mix together the olive oil and lemon juice.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Dip each chicken cube into the olive oil and lemon juice mixture, then roll it in the bread crumb mixture until fully coated.
  6. Thread the coated chicken onto the skewers, packing them tightly but leaving a little space between each piece.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.

Notes

  • For extra flavor, try marinating the chicken in the olive oil and lemon juice mixture for 30 minutes before coating it.
  • You can substitute the chicken with shrimp or vegetables for a different twist.
  • Serve with a side of marinara sauce for dipping or over a bed of mixed greens for a fresh salad option.
