- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup Italian bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Wooden skewers (soaked in water for 30 minutes if using)
Instructions
- Cut the chicken breasts into 1-inch cubes and set aside.
- In a large bowl, combine the bread crumbs, Parmesan cheese, garlic powder, oregano, salt, pepper, and parsley.
- In a separate bowl, mix together the olive oil and lemon juice.
- Preheat your grill or grill pan over medium-high heat.
- Dip each chicken cube into the olive oil and lemon juice mixture, then roll it in the bread crumb mixture until fully coated.
- Thread the coated chicken onto the skewers, packing them tightly but leaving a little space between each piece.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
Notes
- For extra flavor, try marinating the chicken in the olive oil and lemon juice mixture for 30 minutes before coating it.
- You can substitute the chicken with shrimp or vegetables for a different twist.
- Serve with a side of marinara sauce for dipping or over a bed of mixed greens for a fresh salad option.
