Description
Delicious and soft cinnamon roll cookies that combine the flavors of cinnamon rolls with the convenience of cookies.
Ingredients
Scale
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup chopped pecans or walnuts (optional)
- ½ cup raisins (optional)
- For the filling:
- ½ cup brown sugar
- 2 tablespoons ground cinnamon
- ¼ cup unsalted butter, softened
- For the glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the chopped nuts and raisins.
- In a small bowl, mix together the brown sugar, ground cinnamon, and softened butter for the filling.
- Scoop about 1 tablespoon of dough and flatten it in your palm. Place about 1 teaspoon of the filling in the center, then fold the dough around the filling and roll it into a ball. Place the cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
- For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.
Notes
- This recipe makes approximately 24 cookies.
- For a twist, try adding a teaspoon of nutmeg to the dough for extra flavor.
- You can also substitute the nuts with chocolate chips for a sweeter variation.
