Ingredients

  • ½ cup brown sugar
  • 2 tablespoons ground cinnamon
  • ¼ cup unsalted butter, softened
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using, fold in the chopped nuts and raisins.
  5. In a small bowl, mix together the brown sugar, ground cinnamon, and softened butter for the filling.
  6. Scoop about 1 tablespoon of dough and flatten it in your palm. Place about 1 teaspoon of the filling in the center, then fold the dough around the filling and roll it into a ball. Place the cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
  8. For the glaze, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.
