Description

A delicious twist on traditional French toast made with brioche bread, coconut milk, and topped with shredded coconut and sliced almonds.


Ingredients

  • 4 slices of brioche bread
  • 1 cup of coconut milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut
  • 1/4 cup sliced almonds
  • 2 tablespoons butter
  • Maple syrup, for serving
  • Fresh fruit, for garnish (optional)

Instructions

  1. In a mixing bowl, whisk together the coconut milk, eggs, vanilla extract, cinnamon, and salt until well combined.
  2. Preheat a large skillet or griddle over medium heat and add 1 tablespoon of butter.
  3. Dip each slice of brioche bread into the coconut milk mixture, allowing it to soak for about 30 seconds on each side.
  4. Once the skillet is hot, place the soaked brioche slices in the skillet. Cook for 3-4 minutes on each side, or until golden brown.
  5. While the bread is cooking, sprinkle shredded coconut and sliced almonds on top of the bread during the last minute of cooking to toast them slightly.
  6. Remove the French toast from the skillet and repeat the process with the remaining slices, adding more butter as needed.
  7. Serve warm with maple syrup drizzled on top and fresh fruit, if desired.

Notes

  • For a richer flavor, use half-and-half instead of coconut milk.
  • Add a pinch of nutmeg to the egg mixture for an extra layer of warmth and spice.
