- 2 pounds bone-in, skin-on chicken thighs
- 1 cup fresh or frozen cranberries
- 1/2 cup chicken broth
- 1/2 cup honey
- 1/4 cup soy sauce
- 2 tablespoons Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the cranberries, chicken broth, honey, soy sauce, Dijon mustard, garlic, salt, pepper, and thyme. Mix well to create the glaze.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs, skin side down, and sear for about 5-7 minutes until the skin is golden brown. Flip the chicken thighs over.
- Pour the cranberry glaze over the chicken thighs in the skillet.
- Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the glaze is bubbly.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the glaze.
- Serve with a side of roasted vegetables or over a bed of rice to soak up the delicious glaze.
