Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup fresh or frozen cranberries
  • 1/2 cup chicken broth
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cranberries, chicken broth, honey, soy sauce, Dijon mustard, garlic, salt, pepper, and thyme. Mix well to create the glaze.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken thighs, skin side down, and sear for about 5-7 minutes until the skin is golden brown. Flip the chicken thighs over.
  4. Pour the cranberry glaze over the chicken thighs in the skillet.
  5. Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the glaze is bubbly.
  6. Remove from the oven and let the chicken rest for 5 minutes before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the glaze.
