- 2 large cucumbers, diced
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced cucumbers, avocados, cherry tomatoes, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly.
- If using, sprinkle the feta cheese on top and give it a light toss.
- Serve immediately or chill in the refrigerator for about 15-20 minutes to enhance the flavors.
