Ingredients

  • 3 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cake flour
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 320°F (160°C). Grease and line an 8-inch square cake pan with parchment paper, allowing some overhang for easy removal.
  2. In a large mixing bowl, whisk the eggs and sugar together until the mixture is pale and thick, about 5-7 minutes. You can use a hand mixer or stand mixer for this step.
  3. Sift the all-purpose flour, cake flour, and salt together into a separate bowl.
  4. In a small saucepan, combine the milk, vegetable oil, honey, and vanilla extract. Heat over low heat until warm, but do not let it boil.
  5. Gradually add the warm milk mixture to the egg and sugar mixture, whisking gently until combined.
  6. Carefully fold in the sifted flour mixture in three additions, being careful not to deflate the batter.
  7. Pour the batter into the prepared cake pan and gently tap it on the counter to remove any air bubbles.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, lift it out using the parchment overhang and let it cool completely on a wire rack.
