- 1 pound beef sirloin, cut into 1-inch cubes
- 1 pound baby potatoes, halved
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes with olive oil, salt, and pepper. Toss to coat evenly.
- Spread the potatoes in a single layer on a baking sheet and roast in the preheated oven for 20 minutes.
- While the potatoes are roasting, season the beef cubes with salt, pepper, thyme, and rosemary.
- In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the seasoned beef cubes and sear for about 2-3 minutes on each side until browned.
- Add the minced garlic to the skillet and cook for an additional minute, stirring frequently.
- Once the potatoes have roasted for 20 minutes, remove them from the oven and add the beef mixture to the baking sheet.
- Drizzle the remaining 2 tablespoons of melted butter over the beef and potatoes, then return to the oven. Roast for an additional 10-15 minutes, or until the beef is cooked to your desired level of doneness and the potatoes are tender.
- Remove from the oven, garnish with fresh parsley, and serve hot.
Notes
- For a spicier kick, add red pepper flakes to the beef seasoning.
- Substitute the baby potatoes with sweet potatoes for a different flavor and added nutrition.
