Ingredients

  • 1 pound beef sirloin, cut into 1-inch cubes
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes with olive oil, salt, and pepper. Toss to coat evenly.
  3. Spread the potatoes in a single layer on a baking sheet and roast in the preheated oven for 20 minutes.
  4. While the potatoes are roasting, season the beef cubes with salt, pepper, thyme, and rosemary.
  5. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the seasoned beef cubes and sear for about 2-3 minutes on each side until browned.
  6. Add the minced garlic to the skillet and cook for an additional minute, stirring frequently.
  7. Once the potatoes have roasted for 20 minutes, remove them from the oven and add the beef mixture to the baking sheet.
  8. Drizzle the remaining 2 tablespoons of melted butter over the beef and potatoes, then return to the oven. Roast for an additional 10-15 minutes, or until the beef is cooked to your desired level of doneness and the potatoes are tender.
  9. Remove from the oven, garnish with fresh parsley, and serve hot.
