A delicious and creamy Japanese Matcha Cheesecake that combines the rich flavors of cream cheese and matcha green tea.

- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup heavy cream
- 1/4 cup sour cream
- 3 large eggs
- 1/4 cup all-purpose flour
- 2 tablespoons matcha green tea powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the granulated sugar, mixing until well combined.
- Add the heavy cream, sour cream, and vanilla extract to the mixture, and continue to beat until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Sift the flour, matcha powder, and salt together, then gently fold them into the cream cheese mixture until just combined.
- Stir in the lemon juice for added flavor.
- Pour the batter into the prepared springform pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional 30 minutes to cool gradually.
- Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.
- Once chilled, carefully remove the cheesecake from the springform pan and slice to serve.
Notes
- For a lighter version, substitute half of the cream cheese with Greek yogurt.
- Add a layer of fruit topping, such as fresh strawberries or blueberries, for added flavor and presentation.
