Ingredients

- 2 cups rolled oats
- 2 cups unsweetened almond milk (or any milk of choice)
- 1 cup Greek yogurt (plain or vanilla)
- 1/4 cup honey or maple syrup
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the rolled oats, almond milk, Greek yogurt, honey or maple syrup, lemon zest, lemon juice, vanilla extract, and salt. Stir until well combined.
- Gently fold in the fresh blueberries.
- Divide the mixture evenly into four jars or airtight containers.
- Cover and refrigerate overnight (or at least 4 hours) to allow the oats to soak and soften.
- In the morning, give the oats a good stir and add additional toppings if desired, such as more blueberries, a drizzle of honey, or a sprinkle of nuts.
Notes
- For added crunch, top with granola or chopped nuts just before serving.
- Substitute the blueberries with other berries like strawberries or raspberries for a different flavor profile.
