  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1 cup elbow macaroni
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat.
  2. Add the diced onion, green bell pepper, and minced garlic to the skillet. Sauté until the vegetables are tender, about 3-4 minutes.
  3. Stir in the diced tomatoes, tomato sauce, elbow macaroni, beef broth, oregano, basil, salt, and black pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the macaroni is cooked and the mixture is thickened. Stir occasionally to prevent sticking.
  5. If desired, sprinkle shredded cheddar cheese on top during the last 5 minutes of cooking. Cover until the cheese is melted.
  6. Serve hot and enjoy!

  • For a vegetarian version, substitute ground beef with lentils or a plant-based meat alternative and use vegetable broth.
