Delicious Neapolitan Cookies featuring a trio of flavors: chocolate, vanilla, and strawberry.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup cocoa powder
  • 1 cup chopped nuts (optional)
  • 1 cup mini chocolate chips
  • 1 cup strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Divide the dough into three equal portions. To one portion, mix in the cocoa powder until fully incorporated.
  6. Leave the second portion as is (vanilla). For the third portion, mix in the strawberry jam until the dough is pink and well combined.
  7. On a lightly floured surface, roll out each portion of dough into logs about 1 inch in diameter. Wrap each log in plastic wrap and chill in the refrigerator for at least 30 minutes.
  8. Once chilled, slice the logs into ¼-inch thick rounds and place them on the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

  • For a fun twist, add a teaspoon of almond extract to the vanilla portion for an extra layer of flavor.
  • Substitute the strawberry jam with raspberry or cherry preserves for a different fruity taste.
