Delicious Neapolitan Cookies featuring a trio of flavors: chocolate, vanilla, and strawberry.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup cocoa powder
- 1 cup chopped nuts (optional)
- 1 cup mini chocolate chips
- 1 cup strawberry jam
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the dough into three equal portions. To one portion, mix in the cocoa powder until fully incorporated.
- Leave the second portion as is (vanilla). For the third portion, mix in the strawberry jam until the dough is pink and well combined.
- On a lightly floured surface, roll out each portion of dough into logs about 1 inch in diameter. Wrap each log in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Once chilled, slice the logs into ¼-inch thick rounds and place them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
- For a fun twist, add a teaspoon of almond extract to the vanilla portion for an extra layer of flavor.
- Substitute the strawberry jam with raspberry or cherry preserves for a different fruity taste.
