Description

A delicious and colorful Nigerian Fried Rice recipe that is perfect for any occasion.


Ingredients

  • 3 cups long-grain rice
  • 1/4 cup vegetable oil
  • 1 medium onion, chopped
  • 1 bell pepper, diced (any color)
  • 2 cups mixed vegetables (carrots, peas, and corn)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 4 cups chicken or vegetable broth
  • 1/2 cup cooked chicken, shrimp, or tofu (optional)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the diced bell pepper and mixed vegetables, cooking for another 3-4 minutes until softened.
  4. Add the garlic powder, ginger powder, curry powder, thyme, salt, and black pepper. Stir well to combine and cook for 1-2 minutes until fragrant.
  5. Add the rinsed rice to the pot, stirring to coat the rice with the vegetable mixture.
  6. Pour in the chicken or vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  7. If using, fold in the cooked chicken, shrimp, or tofu during the last 5 minutes of cooking.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with chopped green onions before serving.

Notes

  • For a spicier version, add diced jalapeños or a pinch of cayenne pepper to the vegetable mixture.
