Description
A delicious and easy One-Pot Honey BBQ Chicken Mac and Cheese recipe that combines creamy cheese, tender chicken, and flavorful BBQ sauce.
Ingredients
Scale
- 2 cups elbow macaroni
- 2 cups cooked, shredded chicken
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup chopped green onions (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the cooked, shredded chicken and sauté for 2-3 minutes until heated through.
- Stir in the BBQ sauce, garlic powder, onion powder, black pepper, and salt. Mix well to coat the chicken evenly.
- Pour in the chicken broth and bring to a boil. Once boiling, add the elbow macaroni and stir.
- Reduce the heat to low, cover the pot, and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked and most of the liquid is absorbed.
- Remove the pot from heat and stir in the cheddar and mozzarella cheeses until melted and creamy.
- Serve immediately, garnished with chopped green onions.
Notes
- For a spicier kick, add a teaspoon of cayenne pepper or a splash of hot sauce to the BBQ sauce.
- Substitute the chicken with cooked ground beef or turkey for a different flavor profile.
