- 1 large egg

- 1 cup diced fresh peaches (about 2 medium peaches)
- 1/2 cup rolled oats
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the diced peaches, rolled oats, and chopped pecans (if using) until evenly distributed.
- Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a more intense peach flavor, try adding a teaspoon of peach extract to the dough.
- Substitute the peaches with other fruits like blueberries or cherries for a different twist.
