Description

Peachy Oat Bliss Bars are a healthy and delicious snack made with rolled oats, almond butter, and fresh peaches, perfect for satisfying your sweet tooth.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup almond butter (or peanut butter)
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup diced fresh peaches (or canned peaches, drained)
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Mix until well combined.
  3. Gently fold in the diced peaches, chopped nuts, and mini chocolate chips if using.
  4. Spread the mixture evenly in the prepared baking dish, pressing it down firmly with a spatula or your hands.
  5. Bake for 25-30 minutes, or until the edges are golden brown.
  6. Allow the bars to cool in the pan for at least 15 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack before cutting into squares.

Notes

  • For a chewier texture, try adding an extra tablespoon of almond butter.
  • You can substitute the peaches with other fruits like blueberries or strawberries for a different flavor.
