- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract

- 1 cup diced fresh peaches (or canned peaches, drained)
- 1/2 cup chopped nuts (walnuts or pecans)
- 1/4 cup mini chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Mix until well combined.
- Gently fold in the diced peaches, chopped nuts, and mini chocolate chips if using.
- Spread the mixture evenly in the prepared baking dish, pressing it down firmly with a spatula or your hands.
- Bake for 25-30 minutes, or until the edges are golden brown.
- Allow the bars to cool in the pan for at least 15 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack before cutting into squares.

- For a chewier texture, try adding an extra tablespoon of almond butter.
