A delicious and easy recipe for Poor Man’s Lobster Roll using cod or haddock, perfect for seafood lovers.


Ingredients

  • 1 pound of cod or haddock fillets
  • 1 cup of water
  • 1 tablespoon of Old Bay seasoning
  • 1 tablespoon of butter
  • 1 tablespoon of lemon juice
  • 1/4 cup of mayonnaise
  • 1 teaspoon of Dijon mustard
  • 1/4 teaspoon of garlic powder
  • Salt and pepper to taste
  • 4 New England-style hot dog buns
  • 1 cup of shredded lettuce
  • Lemon wedges for serving

Instructions

  1. In a large pot, bring the water to a boil and add the Old Bay seasoning.
  2. Add the fish fillets to the boiling water and cook for about 5-7 minutes, or until the fish is opaque and flakes easily with a fork. Remove the fish and let it cool slightly.
  3. In a bowl, combine the butter, lemon juice, mayonnaise, Dijon mustard, garlic powder, salt, and pepper. Mix well until smooth.
  4. Flake the cooked fish into bite-sized pieces and gently fold it into the mayonnaise mixture until well coated.
  5. Toast the hot dog buns lightly on a skillet or in the oven until golden brown.
  6. Place a layer of shredded lettuce in each bun and generously fill with the fish mixture.
  7. Serve immediately with lemon wedges on the side.
