Ingredients

  • 2 cups baby potatoes, halved
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • 1 pound salmon fillets
  • 1 cup cherry tomatoes, halved
  • 1 lemon, sliced
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, onion powder, dried dill, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for 20 minutes.
  4. While the potatoes are baking, season the salmon fillets with salt and pepper. After 20 minutes, remove the baking sheet from the oven and push the potatoes to one side.
  5. Place the salmon fillets on the other side of the baking sheet. Scatter the halved cherry tomatoes around the salmon and top everything with lemon slices.
  6. Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired before serving.

  • For a crispy finish, broil the salmon and vegetables for the last 2-3 minutes of cooking.
