- 2 cups baby potatoes, halved
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried dill
- Salt and pepper to taste
- 1 pound salmon fillets
- 1 cup cherry tomatoes, halved
- 1 lemon, sliced
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved baby potatoes with olive oil, garlic powder, onion powder, dried dill, salt, and pepper until evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for 20 minutes.
- While the potatoes are baking, season the salmon fillets with salt and pepper. After 20 minutes, remove the baking sheet from the oven and push the potatoes to one side.
- Place the salmon fillets on the other side of the baking sheet. Scatter the halved cherry tomatoes around the salmon and top everything with lemon slices.
- Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
- For a crispy finish, broil the salmon and vegetables for the last 2-3 minutes of cooking.
- Feel free to add other vegetables like asparagus or bell peppers for added color and nutrition.
