Ingredients

- 2 cups fresh corn kernels (about 4 ears of corn)
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder (optional)
Instructions
- In a large bowl, combine the fresh corn kernels, diced avocado, halved cherry tomatoes, chopped red onion, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, and chili powder (if using).
- Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
- Taste and adjust seasoning if necessary, adding more salt or lime juice as desired.
- Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.
Notes
- For added crunch, include diced cucumber or bell peppers.
- Substitute lime juice with lemon juice for a different citrus flavor.
