- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup bourbon
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)
Instructions
- In a medium bowl, whisk together the bourbon, soy sauce, brown sugar, apple cider vinegar, vegetable oil, garlic, ginger, black pepper, and red pepper flakes.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates lightly to prevent sticking.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
