Ingredients

  • 1 cup broccoli florets

  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced onion and minced garlic, sautéing for about 2 minutes until fragrant.
  2. Add the diced chicken to the skillet and cook for another 3-4 minutes until heated through.
  3. Stir in the bell pepper and broccoli, cooking for an additional 3-4 minutes until the vegetables are tender-crisp.
  4. Add the diced pineapple, soy sauce, honey, and sesame oil to the skillet. Stir well to combine and cook for another 2 minutes.
  5. Pour in the cornstarch mixture to thicken the sauce, stirring continuously for about 1 minute until the sauce has thickened. Season with salt and pepper to taste.
  6. Serve the stir-fry over cooked rice or quinoa.

  • For a spicier kick, add red pepper flakes or sliced jalapeños when cooking the vegetables.
