- 2 cups cooked chicken breast, diced
- 1 cup fresh pineapple, diced
- 1 bell pepper (red or green), sliced
- 1 cup broccoli florets
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 1 tablespoon water
- Salt and pepper to taste
- Cooked rice or quinoa for serving
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced onion and minced garlic, sautéing for about 2 minutes until fragrant.
- Add the diced chicken to the skillet and cook for another 3-4 minutes until heated through.
- Stir in the bell pepper and broccoli, cooking for an additional 3-4 minutes until the vegetables are tender-crisp.
- Add the diced pineapple, soy sauce, honey, and sesame oil to the skillet. Stir well to combine and cook for another 2 minutes.
- Pour in the cornstarch mixture to thicken the sauce, stirring continuously for about 1 minute until the sauce has thickened. Season with salt and pepper to taste.
- Serve the stir-fry over cooked rice or quinoa.
Notes
- For a spicier kick, add red pepper flakes or sliced jalapeños when cooking the vegetables.
- Substitute the chicken with shrimp or tofu for a different protein option.
