A delicious and easy-to-make Taco Casserole Delight that combines layers of tortillas, seasoned meat, beans, corn, and cheese, perfect for family dinners.

- 2 cups cooked ground beef or turkey
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 packet (1 ounce) taco seasoning
- 8 small corn or flour tortillas, cut into quarters
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup chopped green onions
- 1/2 cup sliced black olives (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if necessary.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning. Cook for about 5 minutes until heated through.
- In a 9×13 inch baking dish, layer half of the tortilla quarters on the bottom.
- Spread half of the meat mixture over the tortillas, followed by half of the cheddar cheese.
- Repeat the layers with the remaining tortillas, meat mixture, and cheese.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for 5 minutes before serving. Top with sour cream, green onions, black olives, and cilantro if desired.
Notes
- For a spicier kick, add diced jalapeños to the meat mixture or use spicy taco seasoning.
- Substitute ground beef with shredded rotisserie chicken for a quicker option, or use a plant-based meat alternative for a vegetarian version.
