- 2 medium zucchinis, thinly sliced
- 1 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, chopped
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pre-made pie crust (9-inch)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced zucchinis, feta cheese, chopped mint, ricotta cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Place the pre-made pie crust in a 9-inch pie dish and crimp the edges as desired.
- Pour the zucchini mixture into the pie crust, spreading it evenly.
- Drizzle olive oil and lemon juice over the top of the tart.
- Bake in the preheated oven for 35-40 minutes, or until the tart is golden brown and the filling is set.
- Let the tart cool for 10 minutes before slicing and serving.
Notes
- For a gluten-free option, use a gluten-free pie crust or make a crustless version by greasing the pie dish and pouring the filling directly into it.
