A refreshing and easy-to-make avocado lime chilled soup, perfect for hot days.
Ingredients

- 2 ripe avocados, halved and pitted
- 2 cups vegetable broth
- 1 cup plain Greek yogurt
- 1/4 cup fresh lime juice (about 2–3 limes)
- 1/4 cup fresh cilantro leaves, plus extra for garnish
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup diced cucumber (for garnish)
- 1/2 cup diced tomatoes (for garnish)
Instructions
- In a blender, combine the avocados, vegetable broth, Greek yogurt, lime juice, cilantro, garlic, and cumin. Blend until smooth and creamy.
- Taste the mixture and season with salt and pepper as needed.
- Transfer the soup to a bowl or container and cover. Chill in the refrigerator for at least 1 hour to allow the flavors to meld.
- Once chilled, stir the soup and adjust seasoning if necessary.
- Serve in bowls, garnished with diced cucumber, diced tomatoes, and extra cilantro.
Notes
- For a spicier kick, add a diced jalapeño to the blender before mixing.
- For a creamier texture, substitute the Greek yogurt with sour cream or a dairy-free alternative.
