Ingredients
  

  • 2 ripe avocados halved and pitted
  • 2 cups vegetable broth
  • 1 cup plain Greek yogurt
  • 1/4 cup fresh lime juice about 2-3 limes
  • 1/4 cup fresh cilantro leaves plus extra for garnish
  • 1 clove garlic minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/2 cup diced cucumber for garnish
  • 1/2 cup diced tomatoes for garnish

Method
 

  1. In a blender, combine the avocados, vegetable broth, Greek yogurt, lime juice, cilantro, garlic, and cumin. Blend until smooth and creamy.
  2. Taste the mixture and season with salt and pepper as needed.
  3. Transfer the soup to a bowl or container and cover. Chill in the refrigerator for at least 1 hour to allow the flavors to meld.
  4. Once chilled, stir the soup and adjust seasoning if necessary.
  5. Serve in bowls, garnished with diced cucumber, diced tomatoes, and extra cilantro.
