Ingredients

  • 1 pound flank steak
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese, diced
  • 1 cup fresh basil leaves, chopped
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the flank steak with salt and black pepper on both sides.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, and honey.
  4. Brush the marinade over the steak, reserving some for later.
  5. Place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.
  6. Remove the steak from the grill and let it rest for 5 minutes before slicing.
  7. In a mixing bowl, combine cherry tomatoes, mozzarella cheese, and basil. Drizzle with the reserved marinade and toss gently.
  8. Slice the steak against the grain and serve topped with the Caprese mixture.
