- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1 cup cooked brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, sliced
- 1/4 cup ranch dressing (optional)
Instructions
- In a medium bowl, combine the shredded chicken and buffalo sauce. Mix well until the chicken is fully coated.
- In serving bowls, layer the cooked brown rice as the base.
- Top the rice with the buffalo chicken mixture.
- Add black beans and corn evenly on top of the chicken.
- Scatter the cherry tomatoes and diced avocado over the bowls.
- Sprinkle shredded cheddar cheese and green onions on top.
- Drizzle ranch dressing over each bowl if desired.
- Serve immediately and enjoy!

- For a spicier kick, add sliced jalapeños on top.
