  • 1/2 cup buffalo sauce

  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced
  • 1/4 cup ranch dressing (optional)

Instructions

  1. In a medium bowl, combine the shredded chicken and buffalo sauce. Mix well until the chicken is fully coated.
  2. In serving bowls, layer the cooked brown rice as the base.
  3. Top the rice with the buffalo chicken mixture.
  4. Add black beans and corn evenly on top of the chicken.
  5. Scatter the cherry tomatoes and diced avocado over the bowls.
  6. Sprinkle shredded cheddar cheese and green onions on top.
