- 1 cup canned chickpeas, drained and rinsed
- 1/2 cup rolled oats
- 1/4 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1/4 cup chocolate chips (or dried fruit)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- In a food processor, combine the chickpeas, rolled oats, almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Blend until smooth and well combined.
- Stir in the chocolate chips (or dried fruit) until evenly distributed.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
- For added flavor, try mixing in a tablespoon of chia seeds or flaxseeds.
- You can also roll the energy bites in shredded coconut or crushed nuts for a fun twist.
