  • 1 cup canned chickpeas drained and rinsed

  • 1/4 cup almond butter or peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips or dried fruit
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

  1. In a food processor, combine the chickpeas, rolled oats, almond butter, honey (or maple syrup), vanilla extract, cinnamon, and salt. Blend until smooth and well combined.
  2. Stir in the chocolate chips (or dried fruit) until evenly distributed.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up before serving.
