- 2 medium zucchini, sliced into rounds
- 2 medium potatoes, peeled and sliced into rounds
- 1 medium eggplant, sliced into rounds
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup fresh parsley, chopped (for garnish)
- Juice of 1 lemon
Instructions
- Preheat the oven to 400°F.
- In a large mixing bowl, combine the zucchini, potatoes, eggplant, bell pepper, onion, and garlic.
- Drizzle the olive oil over the vegetables and sprinkle with oregano, thyme, salt, black pepper, and red pepper flakes if using. Toss until the vegetables are well coated.
- Spread the vegetable mixture evenly on a large baking sheet.
- Roast in the preheated oven for 35-40 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through for even cooking.
- Remove from the oven and drizzle with lemon juice. Toss gently to combine.
- Garnish with fresh parsley before serving.
Notes
- For a heartier dish, add cooked chickpeas or lentils to the vegetable mixture before roasting.
