Delicious and moist banana muffins perfect for breakfast or a snack.
Ingredients

- 2 to 3 ripe bananas, mashed (about 1 cup)
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a mixing bowl, combine the mashed bananas and melted butter.
- Stir in the baking soda and salt.
- Mix in the sugar, beaten egg, and vanilla extract until well combined.
- Gradually add the flour, stirring until just incorporated. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For added flavor, mix in 1/2 cup of chopped walnuts or chocolate chips before baking.
- To make these muffins healthier, substitute half of the all-purpose flour with whole wheat flour.
