Description

Delicious and moist banana muffins perfect for breakfast or a snack.

Ingredients

Scale
  • 2 to 3 ripe bananas, mashed (about 1 cup)
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a mixing bowl, combine the mashed bananas and melted butter.
  3. Stir in the baking soda and salt.
  4. Mix in the sugar, beaten egg, and vanilla extract until well combined.
  5. Gradually add the flour, stirring until just incorporated. Do not overmix.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For added flavor, mix in 1/2 cup of chopped walnuts or chocolate chips before baking.
  • To make these muffins healthier, substitute half of the all-purpose flour with whole wheat flour.
