  • 1 cup apricot preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 6 scallions trimmed

Method
 

  1. Preheat your oven to 400°F.
  2. In a medium bowl, mix together the apricot preserves, soy sauce, Dijon mustard, garlic powder, onion powder, salt, and pepper until well combined.
  3. Place the chicken thighs in a large baking dish and pour the apricot mixture over them, ensuring they are well coated.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  5. While the chicken is baking, heat olive oil in a skillet over medium-high heat. Add the scallions and cook for 2-3 minutes, turning occasionally, until they are charred and tender.
  6. Once the chicken is done, remove it from the oven and let it rest for 5 minutes before serving. Serve the chicken topped with the charred scallions.
