While the chicken is baking, heat olive oil in a skillet over medium-high heat. Add the scallions and cook for 2-3 minutes, turning occasionally, until they are charred and tender.
Once the chicken is done, remove it from the oven and let it rest for 5 minutes before serving. Serve the chicken topped with the charred scallions.
