Preheat your oven to 400°F (200°C).
In a mixing bowl, combine honey, Dijon mustard, olive oil, garlic powder, salt, black pepper, and dried thyme (if using). Whisk until well blended.
Place the chicken thighs in a large baking dish, skin side up. Pour the honey mustard mixture over the chicken, making sure each piece is well coated.
Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is golden brown.
For extra crispy skin, broil the chicken for an additional 2-3 minutes at the end of baking. Keep a close eye to prevent burning.
Remove from the oven and let the chicken rest for 5 minutes before serving.
