  • 2 tablespoons Tomato Paste optional if using canned tomatoes
  • ½ cup Sun-Dried Tomatoes optional
  • 4 cups Vegetable Broth or chicken broth
  • 2 cans Canned Cannellini Beans drained and rinsed
  • ½ cup Vegan Cream Cheese or regular cream cheese
  • 2 cups Fresh Greens spinach or kale
  • 1 tablespoon Lemon Juice or lime juice
  • to taste Salt and Pepper

Cooking Steps
  1. Sauté the onion in olive oil over medium heat for 3–4 minutes until translucent.
  2. Add cherry tomatoes and cook for 2 minutes until they start to burst.
  3. Incorporate garlic, tomato paste, and sun-dried tomatoes; cook for another minute.
  4. Pour in vegetable broth and add cannellini beans; simmer for about 5 minutes.
  5. Mix in vegan cream cheese, fresh greens, and lemon juice; cook for 2–3 minutes until greens wilt.
  6. Serve hot, garnished with fresh herbs if desired.
