Candied Sweet Potatoes with Pecans: A Must-Try Delight!

Ingredients
  

  • 2 pounds sweet potatoes peeled and cut into 1-inch cubes
  • 1 cup brown sugar packed
  • 1/2 cup unsalted butter
  • 1/2 cup pecans chopped
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup water

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a boil. Add the sweet potatoes and cook for about 10 minutes, or until just tender. Drain and set aside.
  3. In a large mixing bowl, combine brown sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Stir until well mixed.
  4. Add the cooked sweet potatoes to the bowl and gently toss to coat them in the sugar mixture.
  5. Transfer the sweet potatoes to a greased 9x13-inch baking dish. Pour the remaining sugar mixture over the top and sprinkle with chopped pecans.
  6. Add 1/4 cup of water to the baking dish to help create steam while baking.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
  8. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are caramelized and tender.
  9. Let cool for a few minutes before serving.
