Ingredients
  

  • 1 cup cooked chicken shredded
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1/4 cup celery finely chopped
  • 1/4 cup red grapes halved
  • 1/4 cup almonds chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 package of mini phyllo cups 15 cups

Method
 

  1. In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, celery, red grapes, almonds, Dijon mustard, and lemon juice. Mix until well combined.
  2. Season the mixture with salt and pepper to taste. Adjust the seasoning as needed.
  3. Spoon the chicken salad mixture into each mini phyllo cup, filling them generously.
  4. Arrange the filled cups on a serving platter and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  5. Serve chilled and enjoy!
