Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 cup Italian bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • Wooden skewers soaked in water for 30 minutes if using

Method
 

  1. Cut the chicken breasts into 1-inch cubes and set aside.
  2. In a large bowl, combine the bread crumbs, Parmesan cheese, garlic powder, oregano, salt, pepper, and parsley.
  3. In a separate bowl, mix together the olive oil and lemon juice.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Dip each chicken cube into the olive oil and lemon juice mixture, then roll it in the bread crumb mixture until fully coated.
  6. Thread the coated chicken onto the skewers, packing them tightly but leaving a little space between each piece.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  8. Remove the skewers from the grill and let them rest for a few minutes before serving.
