Ingredients
  

  • 2 cups green cabbage finely shredded
  • 1 cup red cabbage finely shredded
  • 1 cup carrots grated
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, and chopped cilantro. Toss to mix evenly.
  2. In a separate small bowl, whisk together the mayonnaise, lime juice, honey, garlic powder, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss until all the vegetables are well coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, give the coleslaw a final toss and adjust seasoning if necessary.
