  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the cavatappi pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 6-8 minutes.
  3. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.
  5. Stir in the grated Parmesan cheese until melted and the sauce is creamy.
  6. Add the fresh spinach and cooked cavatappi to the skillet, tossing to coat everything in the sauce. Cook for an additional 2-3 minutes until the spinach is wilted.
  7. Taste and adjust seasoning with more salt and pepper if needed.
  8. Serve hot, garnished with chopped parsley.
