Preheat the air fryer to 400°F (200°C).
Slice the potatoes into thin rounds, about ¼ inch thick. You can use a mandoline for even slices.
In a large bowl, toss the potato slices with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.
Arrange the potato slices in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer.
Cook for 15-20 minutes, shaking the basket halfway through, until the potatoes are golden brown and crispy.
Remove the crispy potato slices from the air fryer and let them cool for a few minutes. Garnish with fresh parsley if desired before serving.
