Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
Add breadcrumbs, Parmesan cheese, parsley, onion, garlic, paprika, cumin, salt, and black pepper to the mashed chickpeas. Mix until well combined.
Stir in the egg until the mixture holds together. If it's too dry, add a splash of water; if too wet, add a bit more breadcrumbs.
Using your hands, form the mixture into small nugget shapes, about 1.5 inches wide. Place them on the prepared baking sheet.
Lightly spray the nuggets with cooking oil spray to help them crisp up in the oven.
Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
Let cool slightly before serving.
