Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the cottage cheese, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.
Using a spoon or cookie scoop, drop small mounds of the cottage cheese mixture onto the prepared baking sheet, leaving space between each mound.
Lightly brush the tops of the mounds with olive oil and then sprinkle cornmeal or breadcrumbs over each mound to create a crispy coating.
Bake in the preheated oven for 15-20 minutes, or until the chips are golden brown and crispy.
Remove from the oven and let cool for a few minutes before serving.
