  • 2 large cucumbers diced
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1/4 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup feta cheese crumbled (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the diced cucumbers, avocados, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly.
  4. If using, sprinkle the feta cheese on top and give it a light toss.
  5. Serve immediately or chill in the refrigerator for about 15-20 minutes to enhance the flavors.
