In a large bowl, combine the mashed mixed vegetables, breadcrumbs, all-purpose flour, grated cheese (if using), chopped onion, minced garlic, cumin powder, coriander powder, chili powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
Shape the mixture into small patties or cutlets, about 2-3 inches in diameter.
Heat oil in a frying pan over medium heat. Once hot, carefully place the cutlets in the pan, making sure not to overcrowd.
Fry the cutlets for about 3-4 minutes on each side, or until they are golden brown and crispy.
Remove the cutlets from the pan and place them on a paper towel to drain excess oil.
Serve hot with your favorite dipping sauce or chutney.
